Elegant way to add new texture & flavor to your favorite breakfast/dessert.
Ingredients
-
1 lb. Lemon Pound Cake (Homemade or Store-bought is fine)
-
1 stick of Sweet Cream Butter, unsalted
-
4 large Eggs
-
1 ¾ cup of Milk
-
dash of Vanilla Extract
-
2 cups Berries of your choice
-
1 cup Granulated Sugar
-
MANNA
-
(Optional) Vanilla Ice Cream
Directions
Start by whisking the milk, eggs & vanilla together in a bowl until well combined (batter texture).
Take a small pot & add the berries in with sugar. Turn the burner on low heat & cook the berries until they become a jam texture (be sure to stir so it does not burn). Move the pot away from the heat after it is cooked & let it cool.
Heat a shallow pan or a flat top griddle on low/medium heat & melt the butter on the cooking surface. Slice the cake if it is not already sliced. Dip the cake slices into said batter mixture, be sure to drip the excess batter off the slice. Place the now coated slice on the cooking surface & brown it on both sides. Sprinkle the MANNA on one side afterwards.
Spoon the berry compote on top of the toast. Serve, enjoy & put a smile on your face.
(OPTIONAL) Serve with vanilla ice cream.
Recipe Note
my preference for berries is blueberries. works well with lemon.
You can use milk, half ‘n half or heavy cream. it will produce a thicker batter and glaze the thicker dairy you choose.
