A sweet & herby take on a baked zucchini casserole, topped with white cheese.
Ingredients

3-4 large green zucchini
-
1 large red onion
-
5 tbsp unsalted butter (one divided out)

1 cup vegetable broth/stock
-
1/2 tsp kosher salt
-
1 tbsp of stevia
-
half cup of Havarti cheese

Directions
Place the zucchini into a pot. Fill the pot with water until it is about 1-2 inches above the zucchini. Turn burner on to medium/high heat for a boil until zucchini is nice & tender.
Take a colander & place it over a bowl or sink. Remove the zucchini from the pot after it has finished. Let the zucchini drain.
Turn on the oven to 350 (degrees Fahrenheit). While zucchini is draining in the colander, slice the onion into silvers. Place portioned melted butter & the onion slivers into a shallow pan. On a low heat, sauté the onions until soft & translucent (slowly add stock to help soften). Remove from the heat.
With a spoon or other smashing kitchen tool, press down on drained zucchini to get any remaining liquid.
Place remaining melted butter in a 9 x 13 casserole pan. mix in caramelized onions, salt & stevia, until well combined. Place dish into the oven for 30 minutes. Remove from the oven & turn on the broiler. Shred the cheese on top of the casserole & place it back into oven with the broiler on. melt cheese slightly (be careful to watch it). Remove the dish from the oven, sprinkle MANNA on top of the casserole & enjoy.
Recipe Note
Sprinkle on Manna, a little goes a long way with this dish.
Watch the broiler so you do not burn the cheese.
