A pickle wrapped in bacon stuffed with meat and cheese. New twist to a classic.
Ingredients

Single jar of Large Whole Dill Pickles (8 total)

Slices of Bacon (16 total)

½ lb. Ground Beef
-
1 cup Gouda Cheese, shredded

Pam or other non-stick spray

Directions
Turn oven to 375 (degrees Fahrenheit). Remove the pickles from the jar & pat dry. Slice two diagonal lines long-ways in the center of the pickles to create a pocket in the center, careful not to cut all the way through. Take a spoon or fork and gently remove insides of the pickles.
Spray non-stick spray onto the pan & place pickles on the pan. Place into the oven for 20 minutes to soften. Take the pickles out of the oven to cool. DO NOT turn off oven.
While the pickles cook in the oven, go ahead & cook the ground beef. Shake GOOD SAMARITAN into the meat (amount is preferable to taste). Shred the gouda cheese & set it aside.
Once pickles are cool too touch, add the ground beef inside with cheese (spoonful of each should do it). Wrap each pickle with 2 slices of bacon (width-wise). Take tooth pickles to pin bacon if necessary.
Place the stuffed & wrapped pickles back into oven until bacon is cooked through about 20 minutes. Remove the pickles when bacon is cooked thoroughly. Remove the toothpicks. Sit out to cool slightly & enjoy.
Recipe Note
Larger the pickles, the better.
This recipe calls for dill, but you can substitute with bread & butter style for a sweeter flavor, especially if you use brown sugar bacon.
Be sure to watch the oven for "doneness" with the pickles, time differs on size.
