1 large Vidalia Onion, medium sliced
-
4 lbs. Boneless Beef Chuck Roast
-
1 cup Pepperoncini/Banana Peppers
-
½ stick Unsalted Sweet Cream Butter, melted
-
8+ Croissants, sliced
-
GOOD SAMARITAN
-
2 ± cups of Broth/Stock left in crockpot
-
4 tbsp Port Red Wine
-
1 tbsp of Worcestershire Sauce
-
Pinch of Cracked Black Pepper
Port Au Jus:
Directions
Take the chuck roast and rub/pat GOOD SAMARITAN on entire roast. Combine the roast, broth/stock, melted butter, sliced onions & peppers into the crockpot.
Cook on low for 6 to 8 hours.
After timer is done & the meat is nice & tender, remove the roast from the pot & shred. Ladle out 2± cups of broth/stock into a bowl separately. Place the shredded roast back into crockpot & mix with the veggies.
Combine broth, port wine, Worcestershire & black pepper together in a bowl to portion out to smaller cups for dipping. If so desired, toast the croissants for crispier bite. Take portion of meat and veggies & place in between croissants. Serve & enjoy.
Recipe Note
Low & slow is the way to go.
Using Port wine in your Au Jus will give it a richer & sweeter flavor.
